Cornmeal Pancakes

Billy takes the corn to be milled at the end of the harvest. His mother makes cornbread and Billy feeds his pups cornmeal mush. We made cornmeal pancakes.

Recipe:

1 cup white cornmeal

2 cups self rising flour

2 eggs

2 tablespoons sugar

1 to 2 cups milk

Grease an iron skillet with vegetable oil. Mix the remaining ingredients together. Cook over medium heat, turning once. Serve with butter and syrup.
